Ginger Garlic Paste Manufacturing plant INTRODUCTION Ginger and garlic paste is a viscous product retaining the strong aroma and flavor of the raw material namely fresh ginger and garlic. The volatile oil content in the product is influenced by factors such as variety, raw material storage, handling and processing conditions. The product is generally creamy- white or off white in colour the product is microbiologically stable and free from pathogenic bacteria. Product characteristics are, i) Product can be packed in glass jar ii) Product packed in glass jar can be stored under ambient temperature iii) The product is microbiologically is stable Ginger paste is mainly used as a spice in culinary preparations for imparting a characteristic fresh garlic flavor. It is a ready to use preparation that can be used in place of fresh ginger in homes, restaurants etc. RAW MATERIALS Major raw materials are ginger and garlic. Other required raw materials are foodpreservatives such as a citric acid and acetic acid, common salt and cooking oil at last packaging materials needed. PLANT AND MACHINERY List of equipments :- Principal equipments: Fruit washing machine , ginger peeling machine ,garlic peeling machine, crushing machine, mixing machine , filling machine, packaging machine. Working : 8hrs/day, 25 working days/months Capacity : 10Tonnes /month MANUFACTURING PROCESS: Manufacturing Process is Washing, De-skinning, Crushing, Pulping / Paste Making, Mixing of Preservatives, Packing. The ginger and garlic received from farm is washed with water jet pressure to clean up any material. The skin of ginger and garlic then removed by skin peeling machine. Then the same is put in the mill/ crusher. The output of the mill is put to pulper to further making of fine paste. Output is in the stainless steel taken for mixing the preservatives. The same is transferred to pouch packing machine for packing in custom denomination. The mixture of ginger and garlic is grinded in wet grinder with required quantity of water, salt, turmeric etc. and vacuum packed with hot sealing machine in 20 gms, 50 gms and 100 gms packets. SUPPLY/MARKETING : We'll supply at all the general stores,super bazaar, restaurant,hotels and dhaba,etc...of rural and urban areas. Profitability Analysis: for example: it requires 1:1 of major raw material such as ginger and garlic. If we take the example of two kilograms then, 1kg of garlic + 1kg of ginger + another materials = 2 kg of paste. If we made 20 gms of packets of Rs.5 , We can make 100 packets. And we supply in markets at Rs3.50. Then, 3.50*100=350Rs. Raw material = Rs.180 Electricity. = Rs.20 Marketing exp. = Rs.20 And other exp. = Rs.10. After minus all expenses Rs.350 - Rs.230 = Rs.120. Minus Gst: 120 - 18% Gst approx.Rs.25.we'll get Rs.95 profit.
